Farm and Producer
Pablo Andrés Guerrero manages Hacienda El Obraje in Tangua, Nariño. The property moved from grain and fruit production into coffee, with Pablo's architecture background informing the layout of its plantings and processing facilities.
The farm maintains a nursery and its own wet mill, allowing harvested cherries to be processed on site. Irrigation from a retention pond supports selected plots, while low-density shade and a forest reserve form part of the farm's landscape.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
Anaerobic processing limits oxygen exposure during fermentation. This changes the conditions for microbial activity and can influence aroma, acidity, and texture.
In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
