Mario Arriba is listed as a Jaramillo selection from the Peterson family's Hacienda La Esmeralda in Boquete. Jaramillo's coffee grows on cool, shaded slopes, and separating its harvests into small lots helped establish the reputation of Panama Gesha.
This selection combines an anaerobic natural preparation with cold-room drying.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing and roasting.
Processing
The coffee ferments as whole cherries in a low-oxygen environment before drying with the fruit still intact. Cold-room drying uses controlled airflow, temperature and humidity to manage moisture loss. The dried fruit is removed during hulling.
