Farm and Producer

Frank Rivas Torres manages Finca La Indonesia with his siblings in La Unión, Nariño. The estate was inherited from their grandfather, Marco Antonio Torres. Coffee grows alongside shade trees and food crops, including plantain, citrus and lulo. Frank is a Q Grader, and the family combines attention to soil and water management with measurements of cherry ripeness and separate processing of individual varieties.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

Anaerobic processing limits oxygen exposure during fermentation. This changes the conditions for microbial activity and can influence aroma, acidity, and texture.

In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
