Farm and Producer
Fabricio and Ramiro Coronel Pilco run Hacienda La Florida in Sozoranga, Loja. Coffee forms part of a diversified farm that also grows sugarcane, fruit and vegetables, in a warm landscape surrounded by dry forest. This Catucaí selection was grown at 1,550 meters.
Variety
Catucaí is a group of Brazilian selections derived from Icatu and probable Catuaí parentage. The group includes multiple cultivars selected for agronomic performance. The particular selection, growing site, and post-harvest treatment all affect cup quality.
Processing
This lot uses five days of whole-cherry carbonic maceration with mosto, followed by a washed finish. Mosto is liquid collected from coffee fermentation. After fermentation, the fruit and mucilage are removed and the coffee is dried.
