Farm and Producer
Baolian comes from the Yi Nian Yi Su Collective in Lincang, Yunnan. This Catimor selection is grown at 1,500–1,600 meters and prepared with an anaerobic yeast washed process. The collective works with Yunnan coffees across a range of separately named preparations.
Variety
Catimor describes a family of selections developed from Caturra and Timor Hybrid crosses. These coffees were bred for compact growth and resistance to coffee leaf rust. Because the name covers multiple selections, it does not describe one fixed cup profile.
Processing
The coffee ferments with a yeast culture in a low-oxygen environment, then is washed and dried. The yeast and fermentation conditions guide microbial activity, while washing removes the remaining fruit material before drying.
