Finca Santa Monica is an Arcila-family coffee farm in Armenia, Quindío, growing coffee at approximately 1,450–1,500 meters. This Castillo is prepared as an Elixir washed selection with fruit and spices.
Variety
Castillo was developed by Cenicafé in Colombia from Caturra and Timor Hybrid material. Its breeding emphasizes adaptation, productivity, and resistance to coffee leaf rust, while retaining the potential to produce quality coffee under careful cultivation and processing.
Processing
Elixir is the name of this fruit-and-spice preparation. The coffee is processed with those added ingredients and given a washed finish before drying. Its lemongrass, Chartreuse, and dragon-fruit tasting notes describe the cup; they do not specify the ingredient recipe.
