This Yellow Bourbon selection is processed by La Palma y El Tucán in Zipacón, Cundinamarca. The operation prepares its own estate coffees as well as lots from neighboring producers, with fermentation and drying managed separately for each selection.
Variety
Yellow Bourbon is a yellow-ripening form of Bourbon. Bourbon is a tall Arabica variety with strong cup-quality potential, though cultivation, harvest selection, and processing shape the result of each lot.
Processing
La Palma y El Tucán's lactic preparation manages fermentation conditions to encourage lactic-acid-producing microorganisms. The coffee is subsequently dried under controlled conditions. The method can influence acidity and texture, without determining a fixed flavor profile.
