Farm and Producer
Elkin Guzmán works with his family at El Mirador in Huila, Colombia. The farm grows a wide collection of varieties, with Caturra forming a core part of production alongside smaller, separately processed selections.
Elkin develops fermentation and drying methods for individual lots, using cherry ripeness and sorting to guide each preparation.
Variety
Orange Bourbon ripens to an orange cherry color. El Mirador received its seed through an exchange with Los Pirineos in El Salvador after Elkin's partner, Diana Devia Sánchez, visited the farm. Cherry color identifies the selection; it does not guarantee particular flavors.
Processing
Sorted whole cherries ferment in tubs for 60–96 hours before depulping. The pulped coffee returns to the tubs with the juice from that first fermentation, then remains sealed for another 80–120 hours. Fermentation produces the carbon-dioxide-rich environment described here as carbonic maceration.
The coffee is then fully washed and dried for 18–25 days.
