Farm and Producer
Sonia Bolaños began working as a coffee picker as a teenager and now manages three hectares of coffee in San Agustín, Huila. She and her husband, Deimar Muñoz, work within their family's farming project.
Through Monkaaba, Sonia participates in cupping and feedback that connects her production with specialty buyers. This washed Pink Bourbon comes from El Limón at 1,780 meters.
Variety
Pink Bourbon is a pink-ripening Arabica selection associated with Colombian specialty coffee. Genetic testing of coffees sold under this name has found Ethiopian ancestry, so the name alone does not establish a Bourbon cross or a uniform genetic identity.
Processing
The harvested cherries rest in bags for 12 hours before depulping. The coffee then ferments without added water for 36 hours, is washed four times, and drains for 24 hours. Drying takes approximately 15 days in a solar dryer.
