Harold Sabin owns and operates Don Eduardo Estate in Salto, Boquete. His agricultural background and years working with the Savage Coffees team inform the estate's focus on green-tip Gesha. The Horizon preparation is part of that collaboration.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
Horizon begins with whole-cherry fermentation using a yeast culture and finishes as a washed coffee. The fruit is removed before the final drying stage. This hybrid sequence combines yeast-guided fermentation in cherry with a washed finish.
