Farm and Producer
Diego and Jhoan Vergara manage Las Flores in Acevedo, Huila. Jhoan studied coffee production at SENA, and the brothers work together across fermentation, drying and quality control. The farm grows several separately managed varieties, including this Chiroso selection.
Variety
Chiroso is a name used for distinctive Arabica selections cultivated in Colombia. Genetic research has linked tested material to the Ethiopian genetic group. Its interest for specialty coffee lies in cup-quality potential rather than a guaranteed set of flavors.
Processing
Sorted cherries are cleaned with a 5% alcohol solution, oxidized in open bags for 12 hours, then fermented under water for 48 hours. A 30-minute hot-water treatment at about 50°C is followed by rapid cooling.
The whole cherries then dry in a stainless-steel dehumidifier for approximately 24 hours to reach the target moisture level. A two-week stabilization period follows before the coffee is prepared for shipment.
