Farm and Producer

Pepe Jijón farms Finca Soledad in Ecuador’s Intag Valley, Imbabura. His move from mountaineering into coffee led to a project centered on a small planted area within a much larger cloud-forest property. The farm grows Sidra, Gesha, and Mejorado, with processing developed separately for each selection.

Pepe Jijon produces this Gesha selection from Finca Soledad, Imbabura, Ecuador. The growing elevation for this lot is 1515 masl.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

Wave refers to a progression from warmer to cooler conditions, using fermentation tanks and refrigerated environments to control the process. Gesha Wave has gone through a 3-day cherry fermentation and then mosto juice from previous fermentations is added on during the last 2 days when the pH has gone down ‘naturally’. Essentially, in the coffee world, mosto is the result of the fermentation of clean, freshly picked ripe cherries in a medium with a low incidence of oxygen.
