Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
Napoleon is Café Granja La Esperanza's name for this natural preparation. The cherries ferment in a low-oxygen environment and dry with the fruit around the seed. Fermentation and drying are managed as distinct stages before the dried fruit is removed during milling.
