Farm and Producer

Kefyalew Deressa operates the Genji washing station near the Belete-Gera forest in Jimma. His coffee work began with servicing Penagos processing equipment, eventually leading to equipment distribution and his own washing station.

Genji combines cherries from neighboring smallholders with production from Kefyalew's own farm, planted with 74110. His practical experience with wet-mill equipment supports work across washed, natural and experimental fermentation preparations.

Variety

74110 is a compact Ethiopian Arabica selection developed through the Jimma Agricultural Research Center’s work on coffee berry disease resistance and productivity. It originated from Metu-Bishari material and was released in 1979. Growing conditions and processing remain important to its cup expression.

Processing

Anaerobic processing limits oxygen exposure during fermentation. This changes the conditions for microbial activity and can influence aroma, acidity, and texture.

In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
