Farm and Producer
Rodrigo Sánchez Valencia manages Finca Monteblanco near San Adolfo, Huila. Its 18 hectares lie on a hilltop in Vereda La Tocora, with the wet mill and drying areas above the planted slopes. Rodrigo’s work with Claudia Samboni, farm manager Don Gerardo and the farm team combines separate variety plantings with monitored fermentation preparations.
Variety
Caturra is a compact, naturally occurring mutation of Bourbon that became widely cultivated in Latin America. Its smaller stature allows closer planting, while careful cultivation and processing remain important to its cup quality.
Processing
This blueberry co-fermented preparation starts with a mother culture fed with sugar, molasses and concentrated blueberry juice. The culture develops for 190 hours before it is combined with the coffee.
After depulping, the coffee ferments with the prepared culture for 150 hours in sealed tanks, with sugar content and pH monitored during the process. Drying begins with two to three days in direct sun, followed by 15 to 18 days under shaded canopies.
