Farm and Producer
Juan Diego de la Cerda continues his family’s coffee work at Finca El Socorro near Palencia, Guatemala. Coffee occupies only part of the steep property, alongside dairy farming and extensive protected habitat. The farm manages its own wet mill and several drying systems, allowing Juan Diego and his team to adjust preparation to different varieties and weather conditions.
Variety
Laurina, also called Bourbon Pointu, is a natural mutation of Bourbon with a compact growth habit and narrow, pointed seeds. It has naturally lower caffeine than typical Bourbon; this does not make it caffeine-free or a decaffeinated coffee.
Processing
In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
