Farm and Producer
La Palma y El Tucán was founded in Cundinamarca in 2012 by Felipe Sardi and Elisa María Madriñán. Its Zipacón farm and wet mill combine separate variety plantings with experiments in fermentation and drying. This Gesha selection is listed under the project’s pH Clarity Washed preparation.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
This Gesha is prepared using La Palma y El Tucán’s pH Clarity Washed approach, which focuses on monitoring acidity during fermentation. After fermentation, the fruit material is removed and the coffee is washed before drying.
