About the Farm and the Coffee

Los Capachos is a family farm in Florencia, in southern Cauca near the Nariño border. Eyder Martínez works on the coffee’s preparation, drawing on his experience as a biochemical engineer and processor at El Paraíso, while his grandfather cares for the plantings. Native shade trees help protect the soil around Pink Bourbon, Gesha and Sidra, alongside other selections grown on the farm.

Variety

Pink Bourbon is a pink-ripening Arabica selection associated with Colombian specialty coffee. Genetic testing of coffees sold under this name has found Ethiopian ancestry, so the name alone does not establish a Bourbon cross or a uniform genetic identity.

Processing

In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
