Farm and Producer
The Holguín family established Inmaculada Coffee Farms in Pichindé, near Cali, in 2010. The farms lie beside the Farallones de Cali landscape, where coffee grows within an agroforestry system that combines planted selections with surrounding forest. Inmaculada cultivates Eugenioides alongside Gesha, Laurina and Sudan Rume, preparing each separately.
Variety
Coffea eugenioides is a separate coffee species, rather than an Arabica variety. Offering it separately provides an opportunity to experience coffee from a different species, with its own botanical characteristics.
Processing
Anaerobic processing limits oxygen exposure during fermentation. This changes the conditions for microbial activity and can influence aroma, acidity, and texture.
Natural processing dries the coffee with the cherry surrounding the seed. Contact with the fruit during fermentation and drying can contribute to fruit expression and body; careful moisture management remains important.
