Jamison Savage’s Finca Deborah lies in Panama’s Chiriquí highlands, where coffee grows within a cool, high-elevation cloud-forest environment. Native vegetation and forest canopy form part of the estate’s growing conditions. Savage and his team manage cultivation and processing on the farm, preparing distinct selections such as this washed Illumination Gesha.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
Illumination is Finca Deborah’s washed carbonic maceration preparation. Fermentation takes place in a carbon-dioxide-rich environment before the fruit material is removed and the coffee is dried. The controlled fermentation and washed finish are separate stages of this preparation.
