Farm and Producer
Stefano Um began Fazenda Um on an abandoned farm in southern Minas Gerais in 2009. Born in South Korea and raised partly in the countryside, he initially approached farming as a retirement project before developing a focus on coffee quality and traceability.
His sons Boram and Garam later joined the family’s coffee work, establishing Um Coffee Co. in São Paulo. The family combines production at the 300-hectare Minas Gerais property with roasting, education, and work on harvesting and processing.
Variety
Catucaí is a group of Brazilian selections derived from Icatu and probable Catuaí parentage. The group includes multiple cultivars selected for agronomic performance. The particular selection, growing site, and post-harvest treatment all affect cup quality.
Processing
Pulped natural processing removes the cherry skin before drying while retaining fruit mucilage around the seed. This distinguishes it from whole-cherry natural processing and can influence sweetness and body.
