About Finca Potosi, Cafe Granja La Esperanza
Café Granja La Esperanza is led by brothers Rigoberto and Luis Eduardo Herrera, third-generation Colombian coffee producers whose family history is closely tied to Finca Potosí in Caicedonia, Valle del Cauca. The farm’s coffee history began when Juan Antonio Herrera and Blanca Ligia Correa expanded the original Typica plantings to include Yellow Bourbon, Red Bourbon, and Caturra, establishing the foundation for the Herrera family’s continued focus on variety selection and quality-focused production.
This San Juan lot is associated with Finca Potosí, Café Granja La Esperanza’s Caicedonia farm, where elevations range from 1,400 to 1,860 masl. Across their farm group, Café Granja La Esperanza is known for pairing distinctive varieties with carefully controlled processing protocols, including natural, honey, hybrid washed, XO, and Napoleon profiles.
Variety
San Juan is a coffee selection grown by Café Granja La Esperanza at Finca Potosí. The producer has selected it for comparatively large cherries and seeds. Here it is paired with the farm’s XO natural process, which keeps the fruit around the seeds during fermentation and drying.
Processing
XO is Café Granja La Esperanza’s name for a controlled natural process, taking its name from cognac’s “Extra Old” designation. Whole cherries undergo temperature-controlled tank fermentation followed by controlled drying. Keeping the seeds inside the cherries during these stages allows the fruit and fermentation to influence the finished coffee.
