About Finca La Estrella and Carlos Estrella
Carlos Estrella comes from a coffee-growing family in northern Nariño. His experience as a cupper helped shape the direction of Finca La Estrella, where the family established high-elevation Gesha plantings and developed experimental post-harvest methods.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It has high cup-quality potential under suitable growing conditions and is often associated with floral aromatics. Those tendencies do not determine the tasting notes of an individual lot.
Processing
Anaerobic washed preparation combines fermentation with restricted oxygen exposure and a washed finish. After fermentation, the remaining fruit material is removed and the coffee dries in parchment. The fermentation environment and drying conditions both influence the final cup.
