Farm and Producer
Finca Santa Monica is an Arcila-family coffee farm in Armenia, Quindío, at approximately 1,450–1,500 meters. The family's work with Cofinet includes fruit co-fermentation programs such as this Castillo prepared with lychee.
Variety
Castillo was developed by Cenicafé in Colombia from Caturra and Timor Hybrid material. Its breeding emphasizes adaptation, productivity, and resistance to coffee leaf rust, while retaining the potential to produce quality coffee under careful cultivation and processing.
Processing
Lychee and wine yeast are introduced during fermentation with the coffee fruit. The coffee is then washed and dried on raised beds. Lychee is an ingredient in processing, distinct from the tasting notes describing the brewed coffee.
