About the Farm
Janson Coffee is a family coffee producer in Volcán, in Panama's Chiriquí highlands. Established in 1990, the company separates its production into individual lots and processes both washed and natural coffees.
Variety
Gesha, also spelled Geisha, has Ethiopian origins. The population established in Panama is valued for high cup-quality potential at suitable elevations. Floral aromatics are a common association, but cultivation, processing, and roasting all influence the final cup.
Processing
This natural-process Gesha combines an oxygen-restricted fermentation stage with drying in the whole cherry. Anaerobic describes the fermentation environment; natural describes the fruit remaining around the seed during drying. These are separate parts of the preparation.
