About the Farm
Janson Coffee is a family coffee producer in Volcán, in Panama's Chiriquí highlands. Established in 1990, the company separates its production into individual lots and processes both washed and natural coffees.
Variety
Gesha, also spelled Geisha, has Ethiopian origins. The population established in Panama is valued for high cup-quality potential at suitable elevations. Floral aromatics are a common association, but cultivation, processing, and roasting all influence the final cup.
Processing
This is a washed Gesha. Cherry skin and pulp are removed, fermentation releases the remaining mucilage, and the coffee is washed before drying in parchment. The fruit is removed before the drying stage.
