About Finca La Noria
Finca La Noria is part of ChocoVilcaMundo's coffee work in Loja, Ecuador. Bernard Uhe and the CVM team work with local growers and staff, drawing on family coffee-growing experience in Colombia. The project maintains shade, irrigation and separate processing for its different varieties.
This selection is a high-elevation Gesha prepared with an anaerobic fermentation and a washed finish.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing and roasting.
Processing
The coffee begins fermenting in whole cherry in sealed containers, then continues fermenting after depulping. A thorough wash removes the remaining mucilage before the parchment coffee is dried.
