About Finca Calamar, Gildardo López Hoyos
Gildardo López Hoyos grows coffee with his wife, Yolanda Bolaños, and their family at Finca El Calamar in Paicol, on the western side of Huila. The farm's Pink Bourbon selections have reached specialty buyers through Osito.
This washed selection comes from the family's high-elevation plantings, listed at approximately 1,950–2,000 meters.
Variety
Pink Bourbon is a pink-ripening Arabica selection associated with Colombian specialty coffee. Genetic testing of coffees sold under this name has found Ethiopian ancestry, so the name alone does not establish a Bourbon cross or a uniform genetic identity.
Processing
This lot is processed as a classic washed coffee. Ripe cherries are harvested, floated for sorting, and fermented as whole cherry for 30 hours before depulping. After depulping, the parchment undergoes an additional 48-hour fermentation before being washed and dried on raised beds for 20–25 days.
