Farm and Producer
Juan Peña grows coffee at Hacienda La Papaya in Saraguro, Loja, Ecuador. The farm's dry-tropical setting is supported by drip irrigation, soil monitoring and dedicated drying rooms. Separate seed plantings and small processing batches allow the team to follow each variety from cultivation through preparation.
Variety
Pacamara was developed in El Salvador from Pacas and Maragogipe. It is known for its large beans and high cup-quality potential, though plants and cup profiles can vary considerably between selections.
Processing
Ripe cherries are sorted and dried whole in controlled drying rooms. The team manages airflow, humidity and temperature and turns the coffee regularly to promote even drying. The dried fruit is removed during hulling.
