This Pink Bourbon comes through Inmaculada's Fellows Farms Project. Established by the Holguín family in 2022, the program works with partner growers in Huila and Cauca and supports processing and access to international buyers.
The Fellows designation identifies that collaboration. Inmaculada's own estate in Valle del Cauca and its partner-grown coffees are distinct parts of the project.
Variety
Pink Bourbon is a pink-ripening Arabica selection associated with Colombian specialty coffee. Genetic testing of coffees sold under this name has found Ethiopian ancestry, so the name alone does not establish a Bourbon cross or a uniform genetic identity.
Processing
In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
