Farm and Producer
Juan Diego de la Cerda continues his family's coffee work at Finca El Socorro in Palencia, Guatemala. The family processes coffee at its own wet mill, keeping cultivation and preparation closely connected. This washed selection is Maracaturra, one of the distinct varieties grown on the farm.
Variety
Maracaturra combines Caturra with the large-seeded Maragogipe. It is known for large beans and can show considerable variation between selections. It is a single variety selection, rather than a blend of its two parents.
Processing
In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
