Farm and Producer

Hacienda La Esmeralda is the Peterson family's coffee estate in Boquete, Panama. Its work with separately harvested Gesha microlots helped bring the variety to international attention in 2004. Rachel Peterson works with the family across an estate that includes Jaramillo, Cañas Verdes and El Velo.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

This natural-process coffee is dried with the cherry intact. Cold-room drying uses a controlled, cool environment to manage moisture removal from the whole fruit before the dried cherry is hulled.
