Farm and Producer
Juan Diego de la Cerda continues his family's coffee work at Finca El Socorro in Palencia, Guatemala. The farm has passed through several generations, with its own wet mill allowing the team to manage preparation close to where the cherries are grown.
This Gesha selection comes from the farm's high-elevation plantings and is prepared as a washed coffee.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.
Processing
Ripe cherries are selectively picked and taken to the farm's wet mill. After depulping, the coffee ferments in warm water to help loosen the mucilage before it is washed.
The parchment coffee dries on patios and in a greenhouse, with frequent turning to promote even moisture loss.
