Farm and Producer

Max Salazar Rodríguez grows coffee at La Isabela in Costa Rica's West Valley. The family's coffee history in Zarcero reaches back to the 1950s.

Max and his cousins Cristian and Greivin established their micromill in 2016 with support from their fathers, Claudio and Danilo. Processing their own family's harvest allows them to keep varieties and preparations separate, including this Sudan Rume natural.

Variety

Sudan Rume is an Arabica selection associated with the Boma Plateau. Its genetic diversity has made it useful in coffee breeding, including as a parent of newer hybrids. Here it is offered as a named selection, with the farm and processing method shaping its individual expression.

Processing

Natural processing dries the coffee with the cherry surrounding the seed. Contact with the fruit during fermentation and drying can contribute to fruit expression and body; careful moisture management remains important.
