Farm and Producer

Abu Coffee is the Luttrell family's project at Hacienda Cañas Verdes, on the slopes of Volcán Barú near Boquete. The name honors José Guillermo Luttrell Tedman, whom his grandchildren called Abu, short for abuelo, or grandfather.

The farm grows Gesha among native shade trees on volcanic soils, in a setting shaped by mountain sunshine and the local bajareque mist. José Luttrell leads the family's work in cultivation and lot-specific processing.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

This natural Gesha uses a staged fermentation followed by whole-cherry drying. The preparation is identified with Geisha mosto, the liquid associated with coffee-fruit fermentation, which is used during processing. An anaerobic stage limits oxygen exposure while the coffee ferments.

The cherries are dried before the fruit is removed to release the green coffee. Fermentation conditions and the pace of moisture loss both influence the final expression.
