Farm and Producer
Fabricio and Ramiro Coronel Pilco run Hacienda La Florida in Sozoranga, Loja. The farm lies in southern Ecuador's dry forest landscape, with coffee grown at approximately 1,500–1,700 meters among native shade trees. This selection is listed from 1,550 meters.
Variety
Sidra is an Arabica selection associated with specialty production in Ecuador and also cultivated elsewhere in Latin America. Genetic studies have placed tested Sidra material in the Ethiopian genetic group. It is valued for cup-quality potential, with cultivation and processing shaping the expression of each lot.
Processing
For its white honey preparation, Hacienda La Florida removes the cherry skin and most of the mucilage, leaving a thin layer of the sticky fruit material around the seed. The coffee then dries on raised beds exposed to sunlight. This approach retains less fruit material during drying than the farm's yellow and red honey preparations; no honey is added.
