Hacienda La Esmeralda is the Peterson family's coffee project in Boquete, Chiriquí. The family grows and processes Gesha as individually identified lots across its farms, keeping harvests and preparations separate.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

This selection is prepared as a washed coffee. After depulping and fermentation, the remaining fruit material is washed away before the parchment coffee is dried.
