The Peterson family produces Hacienda La Esmeralda's coffees in the Boquete highlands of Chiriquí. Trapiche is a plot within Cañas Verdes, where cool air accompanies a distinct dry season.
The family separates its coffees by plot and preparation. This washed selection is identified as Trapiche 4WB and is processed at Esmeralda's Palmira mill.
Variety
Gesha is an Arabica variety strongly associated with high-altitude quality potential, aromatic clarity, and delicate floral expression. In Panama, it is especially known for jasmine-like aromatics, refined acidity, and fruit profiles that can move between citrus, stone fruit, tea-like structure, and berries. In this Trapiche 4WB lot, those tendencies show through jasmine, white peach, and berry-toned fruit in a clean washed presentation.
Processing
The cherries are depulped and fermented before washing removes the remaining mucilage. The parchment coffee is then dried slowly on raised beds, with airflow helping moisture leave the coffee evenly.
