Farm and Producer
This SL34 comes from Cañas Verdes, one of the Peterson family's farms at Hacienda La Esmeralda in Boquete. The site has a marked dry season while retaining cool highland air.
Esmeralda keeps SL34 within its separate varietal collection, alongside its Gesha production. Separating variety and plot allows each preparation to be evaluated on its own.
Variety
SL34 was selected in Kenya at Scott Agricultural Laboratories. Genetic research places it in the Typica-related group, and it is valued for its quality potential at altitude. Its character varies with the farm and processing method.
Processing
For this natural preparation, the coffee is dried whole on raised beds before the dried fruit is removed. Air can circulate around the cherries during drying, with the fruit retained around the seeds.
