El Burro Estate, Lot 16
El Burro Estate is part of Lamastus Family Estates in Potrerillos, Dolega, in Panama’s Chiriquí highlands. Established in 1925, the estate is now owned by the Lamastus family and lies partly within Volcán Barú National Park.
Coffee grows in young volcanic soils beside native cloud forest. Cool nights, a comparatively dry dry season, and heavy wet-season rainfall distinguish El Burro’s growing conditions. The producer describes an extended ripening period in this high-elevation setting; the elevation listed above applies to this selection.
Variety
Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. Panamanian Gesha is valued for its high cup-quality potential at altitude and often shows delicate floral and stone-fruit aromatics. Cultivation, harvest, processing, and roasting all shape how those characteristics appear in the final cup.
Processing
For this washed Lot 16, the cherries are depulped and fermented so the mucilage can be washed away. The coffee is then dried in parchment in a dark room.
Dark Room Drying, or DRD, uses an enclosed dark room with fans and dehumidifiers to manage airflow and moisture removal. It controls the drying environment without adding a separate fermentation step by itself.
