Los Altos is one of Mexico’s most celebrated coffee-growing regions due to its rich soil and high altitude. This lot brings together coffees from various smallholder producers, including area farmers like Mario Santiz Lopez of Finca Vista Hermosa. Working on small family farms throughout the region, these producers cultivate coffee in the rich volcanic soils and cool mountain climate that have made Chiapas a cornerstone of Mexican specialty coffee production. The Mexican coffee industry faces a myriad of modern challenges, including climate change, economic pressures, market volatility, and labor shortages. Nevertheless, with a resilience and a commitment to innovation and sustainability, these coffee producers continue to navigate these obstacles, striving to uphold the country's rich heritage as a distinguished coffee-producing nation on the world stage. In the Cup This coffee from los Altos de Chiapas is an amazing classic coffee that really ticks all of the boxes for us. When brewing, the aroma is nutty with a rosewater quality. On first sip, there is a milk chocolate sweetness which, with the buttery mouthfeel, reminds us of a rich milk chocolate ganache. There is a wonderful orange citrus acidity which compliments that sweetness. As it cools, the nuttiness becomes more present and with the creamy chocolate sweetness, it reminds us of chocolate covered almonds. The acidity stays mild but clear with a lovely orange zest quality. The finish is both silky and chocolatey, leaving a chocolate ice cream note on the tongue. Overall, this coffee is an easy choice for any coffee lover, and one of our favorites to drink in the chillier mornings.
