Description
As we’ve talked about in the past, the color assigned to a honey processed coffee generally reflects the amount of mucilage left on during the drying stage- from white being the least, to black being the most. For this lot the cherries are rested for a day on raised beds to develop more sugars before pulping, leaving the most sticky sweetness behind. Then the coffee is placed on covered beds to dry for 20 days, resulting in a juicy coffee rich in florals and tropical fruit.
